Coconut Cookies
Coconut cookies - sweet coconut cookies.
Ingredients
1200 g shredded coconut
2200 g butter
3200 g flour
41/2 cup sugar
51 tsp vanilla sugar
61/4 tsp salt
71/4 tsp baking soda
81 tsp lemon juice
Instructions
Pour the shredded coconut into a bowl. Grate the butter over it. Add half of the flour and sugar. Add vanilla sugar and salt, moisten the sugar on top with lemon juice, and add baking soda. Mix everything together.
Knead the dough, gradually adding the remaining flour. Add enough flour so that the dough stops being greasy from the butter but still sticks together without crumbling. Wrap the dough in plastic wrap and place it in the refrigerator for an hour.
Remove the dough from the refrigerator, roll it into logs, cut into circles, and place them on a baking sheet lined with parchment paper.
Bake in a preheated oven at 180-190 degrees Celsius for 10-12 minutes.
