Tvorog Rolls with Nuts and Dried Fruit
These small rolls are made with tvorog (quark or farmer cheese) dough and a filling of nuts and dried fruit. Raisins, dried cranberries or prunes work well in the filling.
Ingredients
1250 g butter
2250 g tvorog (quark or farmer cheese)
33 eggs: yolks for the dough, whites for the filling
41 cup sugar, which can be reduced to 1/2 cup
53 cups flour
6a pinch of baking soda
7vinegar to react with the baking soda
8nuts
9raisins, dried cranberries or prunes
Instructions
Separate the yolks from the whites. Mix the butter, tvorog and yolks, then add the flour and the baking soda mixed with vinegar. Knead into a dough.
For the filling, mix the egg whites with the sugar. Chop the nuts and cut any large dried fruit into pieces.
Roll out the dough into a sheet, spread with the egg white filling and sprinkle with the nuts and your chosen dried fruit.
Roll up the sheet and cut it into slices about 1 cm thick. Arrange on a baking sheet and let them rest briefly before baking.
Bake in an oven preheated to 180 °C for 20-25 minutes. Watch the rolls so they do not dry out.
Transfer the baked rolls to a saucepan or another container with a lid. Cover and leave to cool.
