Homemade Adjika with Apples
Homemade adjika with apples is a vegetable sauce variation made with tomatoes, carrots, sweet peppers and hot peppers. The ingredients are minced and simmered over low heat.
Ingredients
11 kg carrots
21 kg apples
31 kg sweet peppers
41 cup peeled garlic cloves
53-4 kg tomatoes or 3 l tomato juice
61-2 hot peppers
71 cup vinegar
81 cup refined vegetable oil
91 cup sugar
102 tbsp coarse non-iodized salt
Instructions
Wash the vegetables and apples. Peel the carrots and garlic, core the apples and remove the stems and seeds from the peppers.
Pass the carrots, apples, peppers, garlic and tomatoes through a meat grinder. If using tomato juice instead of tomatoes, add it to the minced mixture. The juice will make a thinner sauce.
Transfer the mixture to a large saucepan. Add the vinegar, vegetable oil, sugar and salt, then stir.
Simmer over low heat for about 1.5 hours, stirring regularly.
Sterilize the jars and lids. Spoon the hot adjika into the jars and close them. Let cool and store in the refrigerator.
