Homemade Tvorog in a Multicooker

Homemade tvorog, a fresh cheese also known as quark, is made from kefir and sour cream by heating them gently in a multicooker. Once the whey has drained, the cheese is refrigerated overnight.

Ingredients

11 litre of thick kefir
21 litre of another kefir or yogurt
3400 g sour cream

Instructions

  1. Mix the kefir with the sour cream and pour into the multicooker bowl. Cook in Multicook mode at 75 °C for 1.5 hours.
  2. Set a colander over a large bowl and line it with a clean towel. Transfer the curdled mixture to the colander, allow the whey to drain and leave to cool for 30–60 minutes.
  3. Pour away the whey collected in the bowl and leave the tvorog in the colander for another hour.
  4. Pour away the whey again and refrigerate the colander with the bowl overnight.
